About the Role
As second-in-command, the Sous Chef is responsible for planning and managing food preparation in the kitchen. In this position, the Sous Chef will act as the second in command in the kitchen following and enforcing the Executive Chef’s requirements and guidelines.
Sous Chef is a skilled individual who performs a range of duties. Your duties will include recruiting, training and supervising other kitchen staff as well as responding to customer issues and working with the Executive Chef to develop new menu options.
To be successful in this role, you should have excellent communication skills with in-depth knowledge of several cooking methods, ingredients, equipment and processes.
Work with the Executive Chef to produce diversified menus in accordance with the restaurant’s policy and vision.
Assist with the preparation and planning of meal designs.
Understand various cooking methods, ingredients, equipment and procedures.
Establish the working schedule and organize the work in the kitchen so that kitchen activities operate in a timely manner.
Produce high quality dishes that follow the established menu and are up to the restaurant’s standards as well as the clients’ requirements.
Recruit and train new kitchen employees to meet restaurant and kitchen standards.
Provide support to junior kitchen employees with various tasks including line cooking, food preparation, and dish plating.
Maintain order and discipline in the kitchen during working hours.
Monitor and record inventory and, if necessary, order new supplies.
Adhere to and implement sanitation regulations and safety regulations.
Manage the kitchen team in the Executive Chef’s absence.
